Pasta With Grapes, Blue
Cheese And Spinach
Provided by BPT.
Ingredients
• 12 ounces fusilli or other short
pasta
• 1/2 cup crumbled blue cheese
plus additional for garnish
• 2 tablespoons grated Parmesan
cheese
• 2 tablespoons lemon juice
• 1 tablespoon rice vinegar
• 1 teaspoon grated lemon zest
Directions
• Step 1: Cook the pasta in boiling salted water in a large pot until al dente.
Drain and reserve.
• Step 2: While the pasta is cooking, whisk together the blue cheese, Parmesan
cheese, lemon juice, vinegar, zest, honey, garlic, olive oil and salt and pepper
in a medium bowl.
• Step 3: In a large bowl, combine the pasta, grapes, scallions and blue cheese
mixture. Toss to mix, add the spinach and toss again. Serve with additional
blue cheese sprinkled on top.
Recipe Tip
• Step 1: Add 2 cups diced cooked chicken if desired, for a heartier entree.

year, they’ve decided to take the tournament
and create a virtual gaming event. The first of
its kind for the organization, they are excited
to play in March and are still seeking angels
to help fund the project and their program.
In addition, they host a fundraising party
called White Light White Night every year,
which encourages attendees to wear all white as
a healing color, and invites them to participate
in a silent and live auction, cocktails with partner
Tito’s Handmade Vodka, and a special musical
performance. Last year the party was transitioned
to a safer at-home version, but the celebration
and heart of the event were unchanged.
Arquette describes Walk With Sally as the
“hub” of southern California in terms of family
cancer stories and community. They continue
to grow and expand in size and influence, and
they hope to continue to provide mentors and
resources to families in need of support. Of
his SoCal community, Nick says that a little
goes a long way. Just showing up is the first
step to helping, and even small gestures make
a big difference.
